I have built some shops with WooCommerce and some themes like Enfold and Avada in the past, however I would like to ‘upgrade' to a more supportive theme, which I am hoping that Astra could achieve that.
So here are my questions:
1) I am willing to built those shops (at this point with over 80 products, each with two to three variations, around 800 customer accounts, each shop) from scratch as I am not sure replacing the actual theme with Astra and Elementor would be more work (deactivate actual theme and activate Astra and Elementor) since the actual themes come with their own page builder…
So, am I right that building a site from scratch would be the best idea? of course importing customer accounts, orders, payment details, reports into the new site makes me a bit nervous, but I noticed that there are plugins to solve that… am I right?
I am not planning more than two shops at this time. So what combination would be the smartest or best buy in your opinion?

It is always tricky when migrating a live eCommerce website because if you make a copy into staging, then make your adjustments, the live site will still be taking orders and the sites will be out of sync.
I would recommend setting up a staging copy. Switch the theme and the page builder then evaluate everything that needs to be done. All the settings that need to be adjusted, etc.
I would redesign any pages and make note of any configuration changes that need to happen.
Then when they store is the slowest, temporarily put it into maintenance mode, change the theme and builder, copy over any of the designs, make any adjustments, check everything, then take the store out of maintenance mode.
The process should take no longer then an hour because you will already know the steps to take and you will import any page designs needed to replace the content from the old page builder.

I reached out to the Brainstorm Force team and from their opinion it would make more sense to create a shop page from scratch.. In meanwhile I think so, too…
Only thing I need to make sure is to restore all the orders and user accounts etc without loosing or missing any data…
At the same time I am thinking of switching to a managed server in order to respond to the growing sales – which I also need to see how different this is from a shared server in terms of administration and I think this might be the right time to make a new start…
However, I have already set up a staging site from a copy of the shop on a different server/host, so that I can really play with the options of switching themes etc… since I still am a bit curious.
I will report if I bumped into any unexpected issues…

So how is it going for you? You are being vary brave. But I do understand. Loading times suck on so many hosting companies as soon as you start doing some business. So I know I want the cloud hosting and I really appreciate Adam here for being so supportive. I have been all over and I think this astra and elementor and the cloud host will be just the ticket. Ive been selling on ebay and etsy and mercari for some time now and I want to start using some of that targeted traffic to point to my own site that no one can suddenly suspend me. I dont trust amazon anymore. I dont believe they will continue to support the small seller for very much longer. That is one ruthless company, current madison avenue public relation material not withstanding. So I'm doing it. I am buying the masterclass this next two weeks, im old and retired. I just had to put my husband into the VA retirement home and it has taken our entire pensions to do it. So I gotta generate about 3.5K per month between what he wants and we have a handicapped daughter we help support. my house is free and clear but I have to get down to business. So tally ho. Let us know how it is working for you.
