There are several ways you can do this. And you don't need to use WooCommerce.
Essentially all you need is a booking plugin for WordPress. There are stand-alone booking plugins that can take payments and there are ones that are integrated with WooCommerce.
The stand-alone ones will provide a better value. I'll get a post up on the website about booking plugins.

As an FYI, I am looking for something like this:
It's just a list of recurring weekly events, that tie to a registration form, but even the one in the demo fails as the calendar goes blank if you click on an event. And more importantly the event links goes to a pre-designed page. Would like the week's listing to to to an elementor designed page and then to a registration form.
I just wanted to share that with you so you had some context. And thanks again for adding this topic to your list of to-do videos.
